There are some days when it's so hot outside that the thought of turning on the oven feels like a personal attack. Even standing over the stove for ten minutes sounds exhausting, and somehow a steaming bowl of pasta loses all its appeal when you're already melting.

Hot weather has a funny way of changing what we actually want to eat. I am normally all about comfort food but in summer, that comfort comes from fresh, cool and light dishes that don’t require me to break a sweat making it.

That's when I start looking for easy lunch alternatives.  This is a dish that we have on repeat every summer.  It’s so easy and fresh and takes no time to prepare.  It is the perfect balance of sweet, savory and delicious.   The melon is sweet and juicy that works so well with the saltiness of the prosciutto and the crunchy pistachios.  The honey really pops against the creamy mascarpone. 

This dish screams summer for us and I hope you love it as much as we do!

Easy Summer Melon, Prosciutto & Mascarpone

Ingredients

  • 1 cantaloupe or melon of choice cubed
  • 1 tub of Mascarpone slightly chilled or room temp
  • 6 slices of prosciutto
  • Chopped pistachios
  • Honey

Instructions

  • Remove any melon seeds and chop it into cubes
  • Spread the mascarpone evenly over your serving plate
  • Place melon cubes in the mascarpone
  • Rip the prosciutto into pieces and nestle in between the melon cubes
  • Generously sprinkle the chopped pistachios over the top
  • Drizzle with honey
  • Enjoy!

Notes

This is a great lunch.  Serve with a nice crusty bread and a glass of cold, fruity and crisp white wine like a Pinot Grigio.
