Greek Sheet Pan Chicken: Easy Weeknight Dinner with Ladolemono
If there is one sauce that captures everything we love about Greek cooking, it is ladolemono.
Olive oil, lemon juice, garlic, oregano, salt. That is it. Five ingredients that together taste like a Greek summer. It is the base of this sheet pan and the reason this dish works every single time.
The beauty of a sheet pan dinner is the flexibility. The ladolemono marinade is so versatile that you can swap in whatever vegetables you have. Thinly sliced potatoes work beautifully. Cherry tomatoes instead of a larger cut are great. Add the olives raw or let them roast on the pan. There are no hard rules here.
I bought the dips and pita to make my life easier, but we will be posting recipes for hommus and tzatziki from scratch soon. Either way, serve them alongside — they are not optional.

Ingredients
Ladolemono Marinade
- 3/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice about 2 large lemons
- 1 to 2 teaspoons dried oregano
- 1 garlic clove minced
- Salt to taste
- Black pepper to taste
Chicken and Vegetables
- 4 boneless skinless chicken breasts
- 1 large red onion cut into thick slices
- 1 medium zucchini sliced
- 1 large bell pepper sliced
- 1 large tomato cut into 8 wedges
- Feta cheese cut into chunks
- Pitted Kalamata olives optional
Instructions
- In a large mixing bowl whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper
- Add chicken breasts to the marinade
- Add zucchini, red onion, and bell pepper to the marinade
- Toss well until everything is coated, cover and refrigerate for 1 hour
- Heat oven to 425F
- Spread chicken and marinated vegetables onto a sheet pan in a single layer
- Nestle feta chunks and tomato wedges onto the pan
- Roast for 30 minutes until chicken is cooked through
- Serve hot with pita, olives, hummus, and tzatziki

Notes
Wine Pairing (add to Notes): A dry rosé or Chablis pairs perfectly.
Greece is on our list. Until we get there, this ladolemono chicken is the closest we can get to that Mediterranean table and honestly, it is worth making whether you have been or not.
