This one’s a Christmas market classic. You can find it everywhere from Bruges to Brussels, usually served in a paper cup with whipped cream piled on top. It’s rich, simple, and exactly what you want on a cold December day.

Every country has its own take on hot chocolate, but Belgian versions tend to be thicker and smoother because they use real chocolate instead of cocoa powder. The kind you sip slowly while wandering through market stalls or warming up by the fire back home.

There are no strict rules here. Use whatever mix of dark and milk chocolate you like. Add whipped cream or cinnamon if that’s your thing. Or make it adult with a splash of Amaretto or Baileys — that’s what we do.

Belgian Hot Chocolate

Serves 1

Ingredients

  • 1 cup milk
  • 3 oz dark chocolate
  • 1½ oz milk chocolate
  • 1 tsp vanilla or vanilla sugar

Optional toppings:
Whipped cream, cinnamon, chocolate shavings, or a splash of Amaretto or Baileys

Instructions

  • Add milk and chocolate to a small pot and heat on low.
  • Stir until all the chocolate is melted.
  • Add vanilla.
  • Increase heat to medium-high, stirring constantly — don’t let it boil.
  • When everything’s smooth, pour into a mug and serve warm.
  • Top with whipped cream or your favorite garnish.
